Blistered Mini-Sweet Peppers

I have been seeing these petite peppers in grocery stores more and more lately, and I was attracted to their vibrant colors, so I started buying them, cooking them up, and serving them with drinks, tapas-style! They are healthy, clean, and super-easy to make -- need I say more?

  • 2 tablespoons olive oil
  • 1/2 pound mini-sweet peppers
  • Truffle or sea salt


  1. Heat oil in large skillet over high heat until just smoking.
  2. Add peppers and cook, tossing occasionally, until skins are blistered and flesh is softened (about 4 minutes).
  3. Transfer to bowl and sprinkle with salt, tossing to coat.
  4. Serve immediately.
