Spicy Guacamole with Corn
My super-secret guacamole recipe was just too good not to share. This is a foolproof recipe, and the simple ingredients are very flavorful. I prefer ripe avocados, so I purchase them 2-3 days before I want to make the guac, then I leave them on the kitchen counter to ripen. We can never have enough of this guac!
Ingredients
- 1/2 medium red onion, (diced)
- 1/2 jalapeno pepper, (seeded, minced, optional)
- 4 cherry red tomatoes, (diced)
- 1/4 cup cilantro, (chopped)
- 1 clove garlic, (minced)
- 1/4 cup corn
- 1 lime, (juiced)
- 1/2 teaspoon himalayan salt
- 1/2 teaspoon roasted cumin, (ground)
- 2 Haas avocados, (halved, seeded, peeled)
Instructions
- In large bowl, add all ingredients EXCEPT avocados.
- Mix well and let mixture sit for 2 minutes.
- Add avocados and mash using potato masher or back of fork.
- Mix well and serve immediately with corn chips. This can be refrigerated for up to 2 hours.

Easy and so flavorful. I have made this recipe many times and it always come up GREAT. Fool proof recipe for sure. And I love addition of corn to our guacamole.
