Vegan Vodka Sauce
Vegan Vodka Sauce
This recipe is a total lifesaver on busy days when I have less than 15 minutes to throw dinner together. It requires no prep and no chopping, I just need to get the ingredients together and cook everything in one pan. While the sauce is simmering I boil the pasta and just like that, dinner is ready!
Ingredients
- 1/4 cup olive oil
- 3 cloves garlic, (minced, or 1/4 teaspoon garlic powder)
- 6 ounces tomato paste
- 1/4 cup vodka
- 1 can full-fat coconut milk, (14 ounces)
- 1 pound fusilli, (gluten-free)
- 1 teaspoon salt
- 1 teaspoon sugar, (optional)
- Salt, (to taste)
- Pepper, (to taste)
- Red pepper flakes, (to taste)
- Basil leaves, (chopped, for garnish)
Instructions
- In a pan, heat olive oil over low heat.
- Add garlic and saute until fragrant.
- Add tomato paste and stir until the paste is a deep red color.
- Add vodka and let sizzle.
- Add coconut milk, salt, and sugar (if using), and let the mixture simmer for about 10 minutes.
- Cook pasta according to package directions.
- Drain pasta, save some water, and mix in with sauce plus reserved pasta water to achieve desired consistency.
- Serve immediately and garnish with chopped basil leaves.
