Vegan Vodka Sauce

This recipe is a total lifesaver on busy days when I have less than 15 minutes to throw dinner together. It requires no prep and no chopping, I just need to get the ingredients together and cook everything in one pan. While the sauce is simmering I boil the pasta and just like that, dinner is ready!

Ingredients 

  • 1/4 cup olive oil
  • 3 cloves garlic, (minced, or 1/4 teaspoon garlic powder)
  • 6 ounces tomato paste
  • 1/4 cup vodka
  • 1 can full-fat coconut milk, (14 ounces)
  • 1 pound fusilli, (gluten-free)
  • 1 teaspoon salt
  • 1 teaspoon sugar, (optional)
  • Salt, (to taste)
  • Pepper, (to taste)
  • Red pepper flakes, (to taste)
  • Basil leaves, (chopped, for garnish)

Instructions 

  • In a pan, heat olive oil over low heat. 
  • Add garlic and saute until fragrant.
  • Add tomato paste and stir until the paste is a deep red color.
  • Add vodka and let sizzle. 
  • Add coconut milk, salt, and sugar (if using), and let the mixture simmer for about 10 minutes.
  • Cook pasta according to package directions.
  • Drain pasta, save some water, and mix in with sauce plus reserved pasta water to achieve desired consistency.
  • Serve immediately and garnish with chopped basil leaves.
