Vegan Vodka Sauce
This recipe is a total lifesaver on busy days when I have less than 15 minutes to throw dinner together. It requires no prep and no chopping, I just need to get the ingredients together and cook everything in one pan. While the sauce is simmering I boil the pasta and just like that, dinner is ready!

Ingredients
- 1/4 cup olive oil
- 3 cloves garlic (minced, or 1/4 teaspoon garlic powder)
- 6 ounces tomato paste
- 1/4 cup vodka
- 1 can full-fat coconut milk (14 ounces)
- 1 pound fusilli (gluten-free)
- 1 teaspoon salt
- 1 teaspoon sugar (optional)
- Salt (to taste)
- Pepper (to taste)
- Red pepper flakes (to taste)
- Basil leaves (chopped, for garnish)
Instructions

In pan, heat olive oil over low heat.

Add garlic and saute until fragrant.

Add tomato paste and stir until paste is deep red color.

Add vodka and let sizzle.

Add coconut milk, salt, and sugar (if using), and let mixture simmer for about 10 minutes.

Cook pasta according to package directions.

Drain pasta, saving some water, and mix in with sauce plus reserved pasta water to achieve desired consistency.

Serve immediately and garnish with chopped basil leaves.
