Chocolate Berry Nut Bark
This chocolaty heaven is a truly amazing dessert. With the goodness of coconut oil, nuts, and goji berries, this bark is sinless!
Ingredients
- 300 grams vegan dark chocolate, (80% cacao)
- 1/3 cup coconut oil
- 1 tablespoon vanilla extract
- 1 teaspoon cayenne pepper
- 1 tablespoon cinnamon
- 1/2 cup cacao nibs
- 3/4 cup mini-marshmallows, (vegan)
- 1/2 cup goji berries
- 1 cup mixed nuts, (pistachios, almonds, chopped)
- 1/2 cup coconut flakes
Instructions
- Pour 2 cups water into a saucepan and bring to a boil.
- Place a heatproof bowl on top of the pan and add chocolate, coconut oil, and vanilla extract into the bowl.
- Stir gently until the chocolate is completely melted.
- Remove from pan and stir in cayenne pepper, cinnamon, and cacao nibs.
- Add marshmallows, nuts, goji berries, and coconut flakes, and mix well. Save some nuts, berries, and coconut to sprinkle on top when finished.
- Spread mixture into prepared baking pan and use wet hands to press down the mixture.
- Sprinkle reserved nuts, berries, and coconut on top of the mixture.
- Refrigerate for 1 hour to set. Keep bark refrigerated and serve straight from there; they do not have any stabilizers or additives so they do not hold their solid form at room temperature.
- Cut bark into desired shape and serve.
