Chocolate Berry Nut Bark

This chocolaty heaven is a truly amazing dessert. With the goodness of coconut oil, nuts, and goji berries, this bark is sinless!

Ingredients 

  • 300 grams vegan dark chocolate, (80% cacao)
  • 1/3 cup coconut oil
  • 1 tablespoon vanilla extract
  • 1 teaspoon cayenne pepper
  • 1 tablespoon cinnamon
  • 1/2 cup cacao nibs
  • 3/4 cup mini-marshmallows, (vegan)
  • 1/2 cup goji berries
  • 1 cup mixed nuts, (pistachios, almonds, chopped)
  • 1/2 cup coconut flakes

Instructions 

  • Pour 2 cups water into a saucepan and bring to a boil.
  • Place a heatproof bowl on top of the pan and add chocolate, coconut oil, and vanilla extract into the bowl.
  • Stir gently until the chocolate is completely melted.
  • Remove from pan and stir in cayenne pepper, cinnamon, and cacao nibs.
  • Add marshmallows, nuts, goji berries, and coconut flakes, and mix well. Save some nuts, berries, and coconut to sprinkle on top when finished.
  • Spread mixture into prepared baking pan and use wet hands to press down the mixture.
  • Sprinkle reserved nuts, berries, and coconut on top of the mixture.
  • Refrigerate for 1 hour to set. Keep bark refrigerated and serve straight from there; they do not have any stabilizers or additives so they do not hold their solid form at room temperature.
  • Cut bark into desired shape and serve.
