Chocolate Lemon Orange Cookies
I love chocolate, and I have always loved the combination of chocolate with citrus fruits. This recipe is my take on snap cookies, which my daughter loves; the delicate orange and lemon zests compliment the bold chocolate flavor really well.

Ingredients
- 3/4 cup maple syrup
- 1/4 cup canola oil
- 1 tablespoon cornstarch (dissolved in 1 tablespoon water)
- 1/2 teaspoon vanilla extract
- 1 tablespoon lemon extract
- 1 tablespoon lemon zest
- 1 tablespoon orange zest
- 3/4 cup all-purpose flour
- 1/2 cup whole wheat pastry flour
- 3 tablespoons unsweetened cocoa powder
- 1/2 teaspoon baking powder
- 1/4 teaspoon baking soda
- 1/4 teaspoon salt
Instructions

Preheat oven to 350 degrees F.

Cover three baking sheets with parchment paper.

In medium bowl, whisk together all wet ingredients (maple syrup, oil, cornstarch mixture, vanilla, lemon extract, lemon, and orange zest).

In separate bowl, sift together all dry ingredients (flours, cocoa powder, baking powder, baking soda, and salt).

Stir dry ingredients into wet ingredients until smooth.

Measure out cookie dough in 1-teaspoon scoops and arrange 2 inches apart on prepared baking sheets.

Bake until cookies are firm on top and edges have darkened (about 12-15 minutes).

Remove from oven and let sit for 5 minutes.

Using spatula, move from baking sheet to cookie rack before serving.
