Classic Hummus & Baked Pita

Whether you spell it hummus or houmous, this classic recipe is simply delicious and super-easy to make. You will always find some in my refrigerator along with some cut-up carrots and cucumbers.

Ingredients

  • 2 cans chickpeas (drained & washed)
  • 4 teaspoons tahini
  • 2 cloves garlic (crushed)
  • 1 teaspoon sea salt
  • 6 tablespoons extra virgin olive oil
  • 4 tablespoons freshly squeezed lemon juice
  • 3-4 ice cubes
  • Coriander, cilantro, or parsley leaves (for garnish)
  • 6 6-inch whole wheat pitas
  • 1 tablespoon zatar seasoning

Instructions

  1. Preheat oven to 350 degrees F.

  2. Cut each pita into 8 wedges.

  3. Pour olive oil into a bowl and add zatar seasoning.

  4. Brush both sides of each pita slice with olive oil mixture and arrange on a baking sheet. Bake for 12-15 minutes.

  5. While the pita is baking, in a food processor, add all ingredients and process until smooth. Add more ice cubes if needed.

  6. Spoon into a bowl and top with 2 tablespoons olive oil, then garnish with more zatar seasoning and coriander, cilantro, or parsley leaves.    

  7. Remove the pita from the oven and serve with hummus.
