Curried Cashews
Sweet, salty, spicy, and tangy – these curry-roasted cashews have it all! Loaded with the goodness of curry powder, lightly sweetened with maple syrup and coconut sugar, tangy from ginger and lime zest, these make the perfect healthy snack.
Ingredients
- 2 cups raw cashews
- 1 1/2 tablespoons olive oil
- 1 tablespoon maple syrup
- 2 teaspoons curry powder
- 1 1/2 tablespoons coconut sugar
- 1/2 teaspoon ground cumin
- 1/2 teaspoon ground ginger
- 1/2 teaspoon sea salt
- 2 teaspoons lime zest
Instructions
- Preheat oven to 325 degrees F and line the baking sheet with parchment paper.
- Add cashews to a bare baking sheet and toast for 5 minutes.
- In the meantime, add oil, maple syrup, curry powder, sugar, cumin, ginger, sea salt, and lime zest to a medium mixing bowl and whisk thoroughly to combine.
- Remove slightly toasted cashews from the oven and add directly to the curry mixture. Toss well.
- Add back to baking sheet and bake until golden brown and roasted (about 8-12 minutes).
- Store in an airtight container at room temperature for 2-3 weeks.
