- 2 cups raw cashews
- 1 1/2 tablespoons olive oil
- 1 tablespoon maple syrup
- 2 teaspoons curry powder
- 1 1/2 tablespoons coconut sugar
- 1/2 teaspoon ground cumin
- 1/2 teaspoon ground ginger
- 1/2 teaspoon sea salt
- 2 teaspoons lime zest
Preheat oven to 325 degrees F and line baking sheet with parchment paper.
Add cashews to bare baking sheet and toast for 5 minutes.
In meantime, add oil, maple syrup, curry powder, sugar, cumin, ginger, sea salt, and lime zest to medium mixing bowl and whisk thoroughly to combine.
Remove slightly toasted cashews from oven and add directly to curry mixture. Toss well.
Add back to baking sheet and bake until golden brown and roasted (about 8-12 minutes).
Store in airtight container at room temperature for 2-3 weeks.
