Ginger Tofu Bites

If you come to my house you will almost always find some leftovers of this yummy crispy tofu dish. It’s flavorful, and the kids love having it as a snack, I use it in stir fry and it travels well so I often pack them for lunch for any on-the-road meals. Served with steamed rice and broccoli, it’s a perfect meal!

Ingredients

  • 2 inches fresh ginger
  • 2 cloves garlic
  • 2 tablespoons tamari
  • 1/4 cup coconut sugar
  • 1 tablespoon rice vinegar
  • 1 package organic tofu
  • 1/2 teaspoon sriracha
  • 1/4 cup cornstarch

Instructions

  1.  Peel, grate, or mince ginger and garlic.  

  2. In a medium bowl, combine ginger, garlic, tamari, coconut sugar, sriracha, and rice vinegar, whisking to combine. 

  3. Drain tofu, pat dry with paper towels, and cut into 1-inch cubes.

  4. In large skillet, heat 2 tablespoons vegetable oil over medium-high heat. 

  5. In a large bowl, toss tofu cubes with cornstarch and a pinch of salt and pepper. 

  6. Once oil is hot add tofu and cook, flipping until browned on each side (about 5-7 minutes).

  7. Serve immediately.
