Banana Apple Muffins
These delicious, sugar-free, “clean” muffins are perfect for breakfast, a midday snack, or dessert. I love being able to taste the apple chunks in every single bite, and the sweetness from the coconut makes it extra-special. These treats are super-easy to make, and kids love them too!
Ingredients
- 1 apple, (washed, diced)
- 2 bananas, (super-ripe, mashed)
- 1 cup whole wheat flour
- 1/2 cup rolled oats
- 1/2 cup shredded coconut
- 1 tablespoon cinnamon powder
- 6 tablespoons coconut oil
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 1 teaspoon pure vanilla extract
Instructions
- Preheat oven to 350 degrees F.
- Mix diced apples and bananas in bowl.
- Add all other ingredients and mix well using wooden spoon.
- Fill muffin tray evenly with mixture and bake for 15-20 minutes.
- Let cool for few minutes before serving.
