These delicious, sugar-free, “clean” muffins are perfect for breakfast, a midday snack, or dessert. I love being able to taste the apple chunks in every single bite, and the sweetness from the coconut makes it extra-special. These treats are super-easy to make, and kids love them too!

Ingredients 

  • 1 apple, (washed, diced)
  • 2 bananas, (super-ripe, mashed)
  • 1 cup whole wheat flour
  • 1/2 cup rolled oats
  • 1/2 cup shredded coconut
  • 1 tablespoon cinnamon powder
  • 6 tablespoons coconut oil
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 teaspoon pure vanilla extract

Instructions 

  • Preheat oven to 350 degrees F.
  • Mix diced apples and bananas in bowl.
  • Add all other ingredients and mix well using wooden spoon.  
  • Fill muffin tray evenly with mixture and bake for 15-20 minutes.
  • Let cool for few minutes before serving.
