Banana Apple Muffins

These delicious, sugar-free, “clean” muffins are perfect for breakfast, a midday snack, or dessert. I love being able to taste the apple chunks in every single bite, and the sweetness from the coconut makes it extra-special. These treats are super-easy to make, and kids love them too!

Ingredients

  • 1 apple (washed, diced)
  • 2 bananas (super-ripe, mashed)
  • 1 cup whole wheat flour
  • 1/2 cup rolled oats
  • 1/2 cup shredded coconut
  • 1 tablespoon cinnamon powder
  • 6 tablespoons coconut oil
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 teaspoon pure vanilla extract

Instructions

  1. Preheat oven to 350 degrees F.
  2. Mix diced apples and bananas in bowl.

  3. Add all other ingredients and mix well using wooden spoon.  
  4. Fill muffin tray evenly with mixture and bake for 15-20 minutes.
  5. Let cool for few minutes before serving.
