Mashed Sweet Potatoes
Turn your mashed potatoes game up a notch with these mashed sweet potatoes. This recipe is definitely on the sweeter side so if you’re like me and prefer something a little more savory, simply leave out the maple syrup and add more salt!
Ingredients
- 6 1/2 cups sweet potatoes, (peeled, roughly chopped)
- 3 tablespoons soy milk
- 1 teaspoon pure maple syrup
- 4 pinches sea salt
- 3/4 teaspoon cinnamon
- 3/4 teaspoon nutmeg
- 1/2 teaspoon pure vanilla extract
- Pumpkin seeds, (for garnish)
- Pomegranate seeds, (for garnish)
Instructions
- Place sweet potatoes in a medium pot and cover with water, then bring to a boil.
- Reduce heat to simmer and continue cooking sweet potatoes until fork-tender (about 5-8 minutes).
- Remove sweet potatoes from the pot and drain.
- Return sweet potatoes to the pot and mash using a potato masher.
- Slowly mix in soy milk until mashed potatoes reach the preferred level of creaminess.
- Add maple syrup, sea salt, cinnamon, and vanilla extract and mix well.
- Garnish with pumpkin seeds and pomegranate seeds and serve immediately.
