Mashed Sweet Potatoes
Turn your mashed potatoes game up a notch up with these mashed sweet potatoes. This recipe is definitely on the sweeter side so if you’re like me and prefer something a little more savory, simply leave out the maple syrup out and add more salt!

Ingredients
- 6 1/2 cups sweet potatoes (peeled, roughly chopped)
- 3 tablespoons soy milk
- 1 teaspoon pure maple syrup
- 4 pinches sea salt
- 3/4 teaspoon cinnamon
- 3/4 teaspoon nutmeg
- 1/2 teaspoon pure vanilla extract
- Pumpkin seeds (for garnish)
- Pomegranate seeds (for garnish)
Instructions

Place sweet potatoes in medium pot and cover with water, then bring to boil.

Reduce heat to simmer and continue cooking sweet potatoes until fork-tender (about 5-8 minutes).

Remove sweet potatoes from pot and drain.

Return sweet potatoes to pot and mash using potato masher.

Slowly mix in soy milk until mashed potatoes reach preferred level of creaminess.

Add maple syrup, sea salt, cinnamon, and vanilla extract and mix well.

Garnish with pumpkin seeds and pomegranate seeds and serve immediately.
