Mashed Sweet Potatoes

Turn your mashed potatoes game up a notch with these mashed sweet potatoes. This recipe is definitely on the sweeter side so if you’re like me and prefer something a little more savory, simply leave out the maple syrup and add more salt!

Ingredients 

  • 6 1/2 cups sweet potatoes, (peeled, roughly chopped)
  • 3 tablespoons soy milk
  • 1 teaspoon pure maple syrup
  • 4 pinches sea salt
  • 3/4 teaspoon cinnamon
  • 3/4 teaspoon nutmeg
  • 1/2 teaspoon pure vanilla extract
  • Pumpkin seeds, (for garnish)
  • Pomegranate seeds, (for garnish)

Instructions 

  • Place sweet potatoes in a medium pot and cover with water, then bring to a boil.
  • Reduce heat to simmer and continue cooking sweet potatoes until fork-tender (about 5-8 minutes).
  • Remove sweet potatoes from the pot and drain.
  • Return sweet potatoes to the pot and mash using a potato masher.
  • Slowly mix in soy milk until mashed potatoes reach the preferred level of creaminess.
  • Add maple syrup, sea salt, cinnamon, and vanilla extract and mix well.
  • Garnish with pumpkin seeds and pomegranate seeds and serve immediately.
