Raw Peanut Butter Dessert Bites

Packed with protein, these guilt-free raw peanut butter dessert bites are perfect for hot summer days when you just do not want to turn on the oven. They are grain-free and paleo-friendly, and easy to prepare ahead of time.  Store them in an airtight container so they are ready to eat for a snack or dessert!

Ingredients 

  • 1/4 cup hulled hemp hearts
  • 2 tablespoons ground flax seeds
  • 1/4 cup unsweetened peanut butter
  • 1/4 cup unsweetened protein powder, (I use pea protein)
  • 1 tablespoon cacao nibs
  • 1 teaspoon cardamom powder
  • 2-3 tablespoons maple syrup

Instructions 

  • In a medium mixing bowl, combine all ingredients and stir until completely incorporated. If the dough is too dry or crumbly to form into balls, add tablespoon of peanut butter or maple syrup until the desired texture is achieved.
  • Once dough can be formed well, roll it into 10 equal-sized balls (about 1 tablespoon of dough each).
  • Chill for at least 30 minutes.
