Tofu & Peanut Lettuce Wraps

These lettuce wraps are not only nice to look at and delicious to eat, they're also perfect for kids AND adults. They have an interesting balance of different, subtle flavors -- the spicy ginger and sweet wine create a perfect harmony, while the soft tofu pairs beautifully with the crunchy water chestnuts. Preparing these wraps is just like preparing a burrito, just with lettuce instead of tortillas! It can be served as an appetizer or a main course.

Ingredients

  • 1 tablespoon chili garlic sauce
  • 1 ½ teaspoons toasted sesame oil
  • 3 tablespoons low-sodium soy sauce
  • 1/4 cup hoisin sauce
  • 2 tablespoons rice vinegar
  • 2 tablespoons sherry or Chinese cooking wine
  • 16 oz tofu (medium or firm)
  • 2 teaspoons canola oil
  • 2 tablespoons fresh ginger (minced)
  • 4 scallions (thinly sliced, greens trimmed & reserved)
  • 1/4 cup water chestnuts (finely diced)
  • 1 head lettuce
  • 1 red bell pepper (finely diced)
  • 1/4 cup chopped peanuts

Instructions

  1. In small bowl, whisk together chili garlic sauce, sesame oil, soy sauce, hoisin sauce, vinegar, and sherry. Set aside.
  2. Slice tofu into 1/2-inch thick slabs and lay on top of stacked paper towels.
  3. Use more paper towels to firmly pat tofu in order to remove as much water as possible.
  4. Finely mince tofu. Set aside.
  5. Heat oil in wok or extra-large skillet over medium heat.
  6. Add ginger and scallion whites and cook until scallion whites are translucent and ginger is fragrant (about 2-3 minutes).
  7. Add tofu and cook until just cooked through (about 4-5 minutes), stirring frequently.
  8. Add chili garlic sauce mixture. If tofu is too runny, reduce amount of sauce.

  9. Reduce heat to simmer and cook for another 3-4 minutes, stirring constantly.
  10. Add water chestnuts and stir.
  11. Tear large pieces off lettuce head and fill each lettuce leaf with filling.
  12. Garnish with sliced scallion greens, red peppers, and peanuts before serving.
