Veggie Lettuce Wraps
This dish is a great way to get not only a good amount of vegetables, but a wide variety, in one dish. This super-easy-to-make recipe is a frequent weeknight dinner for my family and a great alternative to stir fried vegetables if you want a healthier option!

Ingredients
- 1 tablespoon olive oil
- 1 onion (thinly sliced)
- 2 carrots (shredded)
- 2 celery stalks (chopped)
- 1/2 cup red pepper (chopped)
- 4 cups cabbage (shredded)
- 1 cup mushrooms (sliced)
- 1 cup water chestnuts (finely chopped)
- 2 tablespoons tamari
- 2 tablespoons mirin
- 1 tablespoon vegan fish sauce (optional)
- Sea salt (to taste)
- Freshly ground black pepper (to taste)
- 1 teaspoon toasted sesame oil
- 1 head lettuce
- Sesame seeds (for garnish)
- Cilantro (for garnish)
Instructions

In large deep skillet, heat olive oil over medium-high heat.

Sauté onion, carrots, and celery for about 5 minutes.

Add red pepper, shredded cabbage, mushrooms, water chestnuts, tamari, salt, pepper, vegan fish sauce (if using) and mirin.

Cover skillet and lower heat, cooking until vegetables are tender (about 10 minutes).

Turn off heat and stir in sesame oil.

Tear large pieces off lettuce head and fill each one with vegetables.

Garnish with sesame seeds and cilantro before serving.
