Trail Mix

Happy trails are healthy trails, and to fuel happy and healthy trails we need some amazing trail mix. This homemade vegan version is super-easy and tasty, packed with the goodness of nuts and seeds and the sweetness of dried cherries, raisins, and chocolate chips. I often make a big batch of this and store it in a dark cool part of my pantry. My kids really enjoy this snack, which makes me a happy mama because I know they’re fueling their bodies with nutritious food.

Total Time: 25 minutes

Ingredients 

  • 3/4 cup raw pecans
  • 3/4 cup raw cashews
  • 1/2 cup raw sunflower seeds
  • 1/2 cup raw pumpkin seeds
  • 1/2 cup unsweetened cherries
  • 1/2 cup unsweetened raisins
  • 1/2 cup 82% dark chocolate or vegan chocolate, (chopped)
  • 1/4 teaspoon salt
  • 1/4 teaspoon cinnamon
  • Nutmeg, (a pinch)

Instructions 

  • Before you begin, make sure all ingredients are at room temperature.  
  • Preheat oven to 350 degrees F.  
  • On a lined baking sheet, add raw pecans and cashews. 
  • Bake in the oven for 10 minutes. 
  • Combine all ingredients in a large bowl and mix well.
  • Store in a mason jar.
