Mango Spice Cake
I just love dessert, and I love it even more when it's a little bit healthy. This cake is spicy and sweet and totally vegan, packed with delicious nutrients.
Ingredients
- 2 cups all-purpose flour
- 1 teaspoon ground cinnamon
- 1 teaspoon ground ginger
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 2 cups frozen mango chunks, (defrosted, or 2 fresh mangoes)
- 1 cup sugar
- 1/2 cup sunflower oil
- 1 tablespoon apple cider vinegar
- 1/2 cup golden raisins
- Powdered sugar
Instructions
- Preheat oven to 350 degrees F.
- Coat an 8-inch baking pan with cooking spray.
- Whisk together flour, cinnamon, ginger, baking soda, and salt in a bowl.
- Puree mangoes.
- In a bowl, whisk mangoes, sugar, sunflower oil, and vinegar.
- Stir in flour mixture, mix well, and fold in raisins.
- Spread batter in prepared baking pan.
- Place pan in the middle rack of oven until a toothpick inserted in center of cake comes out clean (about 35 minutes).
- Cool on a wire rack for 2 hours.
- Dust on powdered sugar before serving.

Haven’t tried this yet but would like to. Is there any other fruit that could be used in place of mangos. Not my favorite. Would love to know so I can make this. Thanks.
