This parfait is the perfect way to start your day; packed with protein and antioxidants, it’s a super-easy-to-make breakfast and the very definition of ‘clean eating.’
Dairy Free Coconut Vegan Yogurt Fruit Parfait Recipe
Ingredients
- 1 cup unsweetened coconut yogurt
- 1/4 cup mixed berries
- 1/4 fresh or frozen mango, (chopped)
- 2 dates, (chopped)
- 1 teaspoon walnuts, (chopped)
- 1 teaspoon pumpkin seeds
- 1 teaspoon sunflower seeds
- 1 teaspoon pomegranate kernels
- 1 teaspoon mint, (chopped)
Instructions
Cooking Directions
- In a small bowl or glass, add ½ cup coconut milk yogurt.
- Add mixed berries and layer rest of coconut yogurt on top.
- Pile on mangoes, dates, walnuts, pumpkin seeds, and sunflower seeds.
- Garnish with pomegranate seeds and mint.
