Cauliflower and Almond Bites (keto and paleo)

Calling all Cauliflower lovers. It is the most versatile, low-carb veggie ever, it’s one of my husband’s favorites. And almonds are the healthiest nuts and I love them. So I combined the two and the creation is these super healthy, delicious, and easy Cauliflower and Almond Bites.
Cauliflower is so versatile
Cauliflower is amazing! You can roast it, grill it, or make a soup, it tastes amazing in tacos. The possibilities are endless. I often think of cauliflower as a blank canvas that will take any flavor you add to it.
Is it a healthy recipe?
Yes! The base of this recipe is cauliflower, almonds, and coconut flour. This recipe is high in fiber, low in carbohydrates, and has zero cholesterol. This recipe is vegan, keto, and paleo-friendly.
How to serve cauliflower bites?
You can serve it as a party appetizer, with the dip. Or, you can serve it as a main dish. I often serve it on a bed of greens, for a low-carb meal. I have also served it on a bed of quinoa fried rice.
No matter how you sever it, this recipe is always a big hit.

These bites can be fried, baked, or cooked in an air fryer. I prefer to par-bake them in the oven and then air fry them. The air fryer gives these bites a crispy top. If you do not have an air fryer, you can broil them for 5-7 minutes in the oven.
Cauliflower and Almond Bites
Ingredients
THE BITES
- 1 medium cauliflower head, (chopped into bite-size pieces, about 4 cups)
- 1/2 cup almonds, (ground)
- 1 tablespoon ground cumin
- 1/2 tablespoon ground coriander
- 1 teaspoon salt
- 2 cloves garlic, (minced)
- 2 tablespoons fresh parsley, (chopped)
- 2 flax eggs, (2 tablespoons ground flax + 6 tablespoons water)
- 3 tablespoons coconut flour
The Sauce
- 4 tablespoons tahini paste
- 6 tablespoons water
- 2 tablespoon lemon juice
- 1 garlic clove , (minced)
- Salt, to taste
Instructions
The Bites
- Preheat the oven to 375 F. and line a baking sheet with parchment paper.
- Add the cauliflower florets to a food processor and pulse until they’re blended but still have a grainy texture.
- Combine the cauliflower, ground almonds, cumin, coriander, salt, garlic, parsley, flax eggs, and coconut flour in a medium bowl, stirring well.
- Form the mixture into 15 small falafel-sized balls.
- Place the balls on the baking sheet and bake for 20 minutes, until they’re parbaked.
- Add the balls to an air-fryer at 330 F. for 15 minutes, until they’re crispy and cooked on the inside.
The Sauce
- In a small bowl, add the tahini, water, lemon juice, garlic, and salt, and whisk until you get a smooth paste. Serve bites with the sauce.

Hi – I want to make this today – can’t tell which ingredients are for the sauce and which go into the bites. Is the sauce just the items that come after oil in the list (tahini, water, lemon juice, salt?)? thank you!

Thanks for the reply! I didn’t make it until today and it was a disaster! I wasn’t sure if the oil was supposed to go in the batter or not – I decided not. But when I cooked these they fell apart badly! I actually added a third flax egg because it wasn’t binding. maybe would have been better to just bake the balls? Plus it was WAY more than 8 golf balls. I’d say it was like 12 balls that were 1.5 times a golf ball. Maybe my cauliflower was too big? It seemed like a medium to me. Hopefully they will taste great even so.

Hi Marilyn, thanks for your message. I am sorry to hear about your experience. I hope it tastes good though and you like them. You bring some good points. I am going to make this recipe again this week and re-write the measurements in cups and be more specific. My sense is that your cauliflower was too big and so there was not enough flax to hold it. Also, if the cauliflower is wet, then it is not going to bind well with flax either. The oils do not go in the mix. They are just for frying. I would like to hear what you thought of the taste and texture. Best, Shikha

also, do you think almond flour would be OK in lieu of grinding almonds? I could grind almonds if that’s preferable – but adds another step with more stuff to wash, etc…
