Baked Artichoke Hearts

Baked Artichoke Hearts

I absolutely love artichokes, so much so that sometimes I eat them as my daily source of greens for several days. (Hey, the buds ARE technically green!) However, I do not enjoy cleaning, washing, and coring artichokes, which is why I came up with this simple and flavorful recipe. I just use a can of artichoke hearts and roast them while getting the rest of dinner together. It makes a great side dish or after-school snack.

  • Prep Time: 5 minutes
  • Cook Time: 1 hour
  • Total Time: 1 hour 5 minutes
  • Servings: 4

Ingredients

  • 4 cans artichoke hearts (14-ounce cans)
  • 6 garlic cloves (quartered)
  • 3 teaspoons extra virgin olive oil
  • Salt & pepper
  • 1 tablespoon lemon juice

Instructions

  1. Preheat oven to 375 degrees F.

  2. Drain artichokes in a colander and rinse to remove the brine.

  3. Mix gently with garlic and olive oil in a bowl.

  4. Pour the artichoke mixture onto a lined baking tray and roast for about 1 hour, tossing if desired.

  5. Sprinkle with salt and pepper and add lemon juice.

Bon appétit!
