Chocolate Coconut Clouds
I call these little desserts "clouds" because they're so soft and fluffy yet also moist, truly melting in your mouth. Super-easy and quick to make, these are great after-school snacks or after-dinner desserts. I just love the combination of chocolate, cardamom, and cayenne!
Ingredients
- 3/4 cup coconut flour
- 1/4 cup cocoa powder
- 1/2 cup maple syrup
- 1/2 cup almond milk, (unsweetened)
- 1 teaspoon pure vanilla extract
- 1/4 cup cacao nibs
- 1/4 teaspoon ground cardamom
- 1/4 teaspoon ground cinnamon
- 1/8 teaspoon cayenne pepper, (optional)
- 1/4 teaspoon salt
- 1/4 cup shredded coconut
Instructions
- In a large bowl, mix all ingredients EXCEPT shredded coconut to create a uniform dough mixture.
- Allow mixture to sit for 2 minutes.
- Pour the shredded coconut into a small bowl.
- Scoop out 1 tablespoon dough mixture with hands and roll to form a small ball.
- Repeat until the dough mixture is gone.
- Roll each ball in shredded coconut and set aside.
- Let rest for a few minutes, then enjoy fresh or chilled.
