With tofu and dairy-free chocolate being the main ingredients, this is a tasty vegan twist on a traditional chocolate mousse. When I serve this, I always ask people to guess the secret ingredient, and most of them are amazed that something so delicious is made with tofu!

- 1 cup vegan chocolate chips
- 1 packet silken tofu
- 1/2 teaspoon pure vanilla extract
- Flaky sea salt
- Cacao nibs
Melt chocolate chips over double boiler on stove or in microwave.
Add tofu, melted chocolate, and vanilla extract to blender or food processor and blend until smooth.
Spoon mousse into desired serving dishes and garnish with sea salt and/or cacao nibs.
