Chocolate Peanut Butter Bites

This 5-ingredient recipe is super-easy to make and oh-so-satisfying. The combination of rich dark chocolate and crunchy peanut butter really hits the spot. I always have these guilt-free bites in the refrigerator and eat them as a pre-workout snack or post-dinner, healthy dessert.

Ingredients 

  • 1 cup dates, (pitted)
  • 3 tablespoons peanut butter, (crunchy)
  • 1/4 cup dairy-free dark chocolate, (chopped)
  • 1 tablespoon chia seeds
  • 2/3 cup gluten-free rolled oats

Instructions 

  • If dates are dry, soak in warm water for 10 minutes, then drain well.
  • Pulse dates in a food processor until in small pieces.
  • Add oats, chocolate, chia seeds, and peanut butter, and pulse until fully combined.
  • Roll into 1-inch balls, using the warmth of your hands to mold together.
  • Leave in fridge or freezer for 15 minutes to set.
  • Take out and leave at room temperature for 15 minutes before serving.
