These Savory Vegan Keto Pancakes are amazingly fluffy and packed with flavor. They’re a great low-carb alternative to traditional pancakes, loaded with delicious vegetables and fiber to help keep you feeling satisfied all day long.

 

Breakfast for lunch or dinner, come and get it! My preference is usually to grab savory over sweet for breakfast any day of the week; now my kids, on the other hand, that’s a different story. For all the pancake lovers out there, I have a scrumptious breakfast for you to try, pop one or a few in your mouth, you won’t miss the sweet pancakes for breakfast today, I promise!

These vegan savory keto pancakes are easily one of my favorites, they are SO easy to make; only one dish to throw all the ingredients in and mix, and lastly, wait patiently for them to cook. What makes them dairy-free is my choice to use a can of full-fat coconut milk instead of regular milk. The result is still a moist and delicious pancake. If you don’t have a can of coconut milk on hand, almond milk will work here too.

Almond Flour, tapioca flour & psyllium husk- Add body to these pancakes and also makes them moist.

Turmeric powder- Gives these pancakes a beautifully light-yellow hue.

Red Onion & red bell pepper- Adds a mild flavor, beautiful color, and crunch.

Cauliflower- Adds body and texture.

Cilantro & ginger- These spices are a must and complement all the ingredients in this recipe.

Jalapenos- For a little heat but skip it if you like.

Coconut Milk- The key to giving these pancakes their richness and fluffy and moist texture.

How To Make Dairy-Free Keto Pancakes with No Eggs?

STEP 1: PREPARE THE VEGETABLES

Finely chop the red onion, cilantro leaves, red bell pepper, and jalapenos, if you are using them, and set them aside. Peel and grate the ginger and the cauliflower and set aside.

STEP 2: PREPARE THE BATTER & COOK

In a large mixing bowl, add all the ingredients, (vegetables, flour, spices, milk) and mix well ensuring everything is well combined.

Heat an Ebelskiver pan or skillet to medium-high heat. I like using the Ebelskiver pan because it makes these keto pancakes with no eggs look so adorable but most importantly cooks evenly.

Spoon the prepared batter using a mini muffin scoop onto the pan and cook for about 3-4 minutes on each side until golden brown. Serve these dairy-free savory keto pancakes hot with a nice green salad.

Originating from Denmark, the ebelskiver pan is typically cast iron and heats evenly throughout. It is traditionally used to make round ball-shaped Danish pancakes. Nowadays this pan is used to make all types of cuisines over the world like eggs, Japanese Takoyaki, Danish pancakes stuffed with fruit or jam, and my fluffy keto pancakes!
