Rosemary Green Beans

A lot of times in my house, green beans replace salads for our daily dose of greens. I just love it when I can get my hands on some super-fresh green beans at the local farmers market. I like to roast them with rosemary for an intense woody flavor and add walnuts for crunch.

Cook Time: 15 minutes
Total Time: 27 minutes

Ingredients 

  • 1 1/4 pounds green beans, (trimmed)
  • 1/2 cup walnuts, (chopped)
  • 1 1/2 tablespoons fresh rosemary, (finely chopped)
  • 1 tablespoon olive oil
  • Salt & pepper

Instructions 

  • Preheat oven to 475 degrees F.
  • Toss all ingredients in a bowl and season with salt and pepper.
  • Spread on a rimmed baking sheet and roast until beans are tender and browned in spots (about 15-17 minutes), stirring occasionally.
  • Serve immediately.
