Summer Berry Kale Salad
This salad is the perfect summertime lunch meal or dinner appetizer, or even a picnic! I love adding sweet berries to the tangy kale and topping it all with crunchy nuts.
Ingredients
- 4-5 cups kale, (finely chopped)
- 1 cup strawberries, (sliced)
- 1 cup blackberries
- 1/2 cup blueberries
- 1/2 cup raspberries
- 1/2 cup mango, (diced)
- 1/4 cup almonds, (slivered)
- 1/4 cup walnuts, (halved)
- 3 tablespoons apple cider vinegar
- 2 tablespoons dijon mustard
- 2 tablespoons agave syrup
- 3 tablespoons olive oil
- Salt and pepper, (to taste)
Instructions
- In a small bowl, whisk together apple cider vinegar, mustard, honey, salt, and pepper until combined.
- Slowly stream in olive oil while whisking until emulsified.
- In a large bowl, combine kale and dressing.
- Massage dressing into the kale until coated and place in the fridge to marinate for few minutes.
- While kale is marinating, chop fruit.
- Add fruits and nuts to kale and toss until evenly combined.
- Serve immediately.
