Summer Berry Kale Salad

This salad is the perfect summertime lunch meal or dinner appetizer, or even a picnic! I love adding sweet berries to the tangy kale and topping it all with crunchy nuts.
Servings: 6
Prep Time: 15 minutes

Ingredients 

  • 4-5 cups kale, (finely chopped)
  • 1 cup strawberries, (sliced)
  • 1 cup blackberries
  • 1/2 cup blueberries
  • 1/2 cup raspberries
  • 1/2 cup mango, (diced)
  • 1/4 cup almonds, (slivered)
  • 1/4 cup walnuts, (halved)
  • 3 tablespoons apple cider vinegar
  • 2 tablespoons dijon mustard
  • 2 tablespoons agave syrup
  • 3 tablespoons olive oil
  • Salt and pepper, (to taste)

Instructions 

  • In a small bowl, whisk together apple cider vinegar, mustard, honey, salt, and pepper until combined. 
  • Slowly stream in olive oil while whisking until emulsified.
  • In a large bowl, combine kale and dressing. 
  • Massage dressing into the kale until coated and place in the fridge to marinate for few minutes. 
  • While kale is marinating, chop fruit.  
  • Add fruits and nuts to kale and toss until evenly combined.
  • Serve immediately.
