Nut & Berry Crumble
In the peak of summer when berries are abundant and full of flavor, this dessert crumble is super-easy to make and always a big hit. I make it often, and no one in the family misses the butter or calories that come with traditional berry crumbles. So, dig in without any guilt!
Ingredients
- 1/3 cup walnuts
- 1/3 cup almonds
- 1/3 cup pistachios
- 1 cup almond meal
- 1/4 cup liquefied coconut oil
- 1/4 cup maple syrup
- 1 tablespoon cinnamon
- 1 tablespoon pure vanilla extract
- 1 cup strawberries, (quartered)
- 1 cup raspberries
- 1 cup blackberries
- 1 cup blueberries
Instructions
- Preheat oven to 350 degrees F.
- In pan, mix together nuts and roast in oven for 10 minutes. Crush nuts into small chunks or leave whole.
- In bowl, combine roasted nuts, almond meal, coconut oil, maple syrup, cinnamon, and vanilla extract.
- In individual ramekins, spread 1 tablespoon nut mixture on bottom.
- Top with mixed berries and finish with another layer of nut mixture.
- Bake for 30 minutes.
- Serve warm or at room temperature.
