Nut & Berry Crumble

In the peak of summer when berries are abundant and full of flavor, this dessert crumble is super-easy to make and always a big hit. I make it often, and no one in the family misses the butter or calories that come with traditional berry crumbles. So, dig in without any guilt!

Ingredients

  • 1/3 cup walnuts
  • 1/3 cup almonds
  • 1/3 cup pistachios
  • 1 cup almond meal
  • 1/4 cup liquefied coconut oil
  • 1/4 cup maple syrup
  • 1 tablespoon cinnamon
  • 1 tablespoon pure vanilla extract
  • 1 cup strawberries (quartered)
  • 1 cup raspberries
  • 1 cup blackberries
  • 1 cup blueberries

Instructions

  1. Preheat oven to 350 degrees F.
  2. In pan, mix together nuts and roast in oven for 10 minutes. Crush nuts into small chunks or leave whole.

  3. In bowl, combine roasted nuts, almond meal, coconut oil, maple syrup, cinnamon, and vanilla extract.  

  4. In individual ramekins, spread 1 tablespoon nut mixture on bottom.  

  5. Top with mixed berries and finish with another layer of nut mixture.  

  6. Bake for 30 minutes.
  7. Serve warm or at room temperature.
