In the peak of summer when berries are abundant and full of flavor, this dessert crumble is super-easy to make and always a big hit. I make it often, and no one in the family misses the butter or calories that come with traditional berry crumbles. So, dig in without any guilt!

Ingredients 

  • 1/3 cup walnuts
  • 1/3 cup almonds
  • 1/3 cup pistachios
  • 1 cup almond meal
  • 1/4 cup liquefied coconut oil
  • 1/4 cup maple syrup
  • 1 tablespoon cinnamon
  • 1 tablespoon pure vanilla extract
  • 1 cup strawberries, (quartered)
  • 1 cup raspberries
  • 1 cup blackberries
  • 1 cup blueberries

Instructions 

  • Preheat oven to 350 degrees F.
  • In pan, mix together nuts and roast in oven for 10 minutes. Crush nuts into small chunks or leave whole.
  • In bowl, combine roasted nuts, almond meal, coconut oil, maple syrup, cinnamon, and vanilla extract.  
  • In individual ramekins, spread 1 tablespoon nut mixture on bottom.  
  • Top with mixed berries and finish with another layer of nut mixture.  
  • Bake for 30 minutes.
  • Serve warm or at room temperature.
