Winter Fruits & Greens Salad

There's nothing quite like a nice, simple salad to make you feel like you are truly "clean eating". My kids love the addition of different fruits to a simple salad, and it's a great way to use some leftovers for a super-quick lunch. Plus, it's also vegan!

  • 1 apple (medium, diced)
  • 1 grapefruit (cut in segments)
  • 1 medium pomegranate (seeded)
  • 2 cups romaine lettuce (chopped)
  • 1 tablespoon balsamic vinegar
  • 1 teaspoon salt
  • Freshly ground pepper
  • 1 tablespoon lemon juice


  1. Place diced apple, grapefruit segments, and pomegranate seeds in salad bowl.

  2. Add romaine lettuce and mix well.
  3. Add balsamic vinegar, salt, pepper, and lemon juice.
  4. Mix well and serve immediately.
