These Waffled Hash Browns from my dear food blogger friend Community Kitchen in Atlanta are the definition of southern comfort food. My kids and I are just thrilled that we found a way to make them vegan -- using olive oil instead of butter!

Cook Time: 12 minutes
Total Time: 22 minutes

Ingredients 

  • 3 large russet potatoes, (peeled, shredded)
  • 1 tablespoon lemon pepper
  • 1/2 tablespoon salt
  • 1/2 tablespoon melted butter, (or olive oil if making vegan)

Instructions 

  • Preheat the waffle iron to medium-high.
  • Add shredded potatoes to a colander and press excess liquid from potatoes using a potato masher.  
  • Transfer shredded potatoes to a large bowl and toss with lemon pepper and salt.  
  • Brush both sides of the waffle iron with melted butter (or olive oil if making vegan).  
  • Add a mound of potatoes to each section of waffle iron.  
  • Close the iron, pressing lightly, and cook until crispy and golden brown (about 10-12 minutes).
  • Serve immediately.
