These vegan chocolate truffles are incredibly easy to make, very sweet, and very satisfying. I try to make them whenever I have some free time on my hands, and then I store them in the fridge so that whenever my kids ask for something sweet or need a little snack between meals, I can offer these truffles and know I'm feeding them something nutritious!

Ingredients 

  • 1 cup almonds
  • 2 tablespoons unsweetened cocoa powder
  • 1 cup Medjool dates, (pitted, chopped)
  • 1 teaspoon coconut oil
  • 1 teaspoon cacao nibs
  • Salt

Instructions 

  • Place almonds, cacao powder, and salt in a food processor and pulse to break down almonds.
  • Add dates, coconut oil, and cacao nibs, then pulse until the mixture starts to clump.
  • Roll mixture into 1-inch balls and serve immediately or store in an airtight container for up to 2 weeks in the refrigerator or up to 1 week at room temperature.
