Winter Fruits & Greens Salad
There's nothing quite like a nice, simple salad to make you feel like you are truly "clean eating". My kids love the addition of different fruits to a simple salad, and it's a great way to use some leftovers for a super-quick lunch. Plus, it's also vegan!
Ingredients
- 1 apple, (medium, diced)
- 1 grapefruit, (cut in segments)
- 1 medium pomegranate, (seeded)
- 2 cups romaine lettuce, (chopped)
- 1 tablespoon balsamic vinegar
- 1 teaspoon salt
- Freshly ground pepper
- 1 tablespoon lemon juice
Instructions
- Place diced apple, grapefruit segments, and pomegranate seeds in a salad bowl.
- Add romaine lettuce and mix well.
- Add balsamic vinegar, salt, pepper, and lemon juice.
- Mix well and serve immediately.
