Baked Tofu & Avocado Sauce
As a vegan household, my family always has tofu and avocados on hand, and I am always coming up with new recipes that incorporate both ingredients. The two are actually the perfect combination in terms of nutrition and texture!
Ingredients
- 1 pound super-firm tofu
- 2 tablespoons tamari sauce
- 1 tablespoon maple syrup
- 1 teaspoon roasted sesame oil
- 1 teaspoon onion powder
- 1 teaspoon garlic powder
- 1 teaspoon nutritional yeast flakes
- 1/2 teaspoon cumin powder
- 1 cup cilantro leaves
- 1/2 cup fresh parsley
- 2 tablespoons onion, (chopped)
- 3 cloves garlic, (minced)
- 1/4 cup extra virgin olive oil
- 2 tablespoons lemon juice
- 1 medium avocado, (pitted)
- Salt, (to taste)
Instructions
- Preheat oven to 400 degrees F.
- Line a baking sheet with parchment paper and lightly brush with oil. Set aside.
- Drain and press tofu, then cut into 2-inch cubes.
- In a small bowl, combine soy sauce, maple syrup, sesame oil, onion powder, garlic powder, nutritional yeast flakes, and cumin, mixing well.
- Brush marinade on tofu slices and allow to marinate for 20 minutes.
- Meanwhile, prepare the avocado sauce by adding cilantro, parsley, onion, garlic, olive oil, lemon juice, avocado, and salt to a high-speed blender or food processor and process until smooth.
- Place baked tofu slices onto a baking sheet and brush with oil.
- Bake for 30 minutes, turning over halfway through.
- Serve tofu topped with avocado sauce.
