Chocolate & Avocado Pudding
This unconventional, guilt-free dessert has all my favorite ingredients, and although they don't normally go together they actually taste great together – avocado, chocolate, and orange! It’s an easy recipe to make and has become one of our house favorites, now in direct competition with my Vegan Chocolate Mousse.

Ingredients
- 2 large avocados (pits removed)
- 1 vanilla bean (split lengthwise)
- 3/4 cup unsweetened cocoa powder
- 1/2 cup pure maple syrup
- 1/4 cup agave nectar
- 1/4 cup fresh orange juice
- Orange zest from 1 orange
- 1 tablespoon coconut suguar
- 1/2 teaspoon kosher salt
- 1/4 cup cocoa nibs
Instructions

Scoop avocado flesh into blender and scrape in vanilla bean seeds.

Add cocoa powder, maple syrup, agave nectar, orange juice, orange zest, coconut sugar, and salt, then blend to purée.

With motor running, gradually add in ¾ cup warm (but not boiling) water, then blend, adding more orange juice if needed. Consistency should be smooth and creamy.

Divide pudding among 8 4-6 oz. ramekins or small bowls and chill uncovered for at least 2 hours.

Top with cocoa nibs and cover, then continue to chill in refrigerator until ready to eat.
