Super Greens Salad

Kale truly is “the king of greens” -- it’s got such a variety of flavor boosts both sweet and tangy, and it tastes so good. My family can never have enough of this salad, which is fine with me because it’s healthy and super-easy to make!

Ingredients

  • 2 bunches kale (Lacinato, Dinosaur or Tuscan)
  • 1 teaspoon sea salt
  • 1 tablespoon lemon juice
  • 3 tablespoons olive oil
  • 1 tablespoon whole grain mustard
  • 1 tablespoon honey
  • 1/2 cup grapes (halved)
  • 1 tablespoon pine nuts

Instructions

  1. Remove kale leaves from stems and slice super-thin.

  2. Put kale in large bowl and sprinkle with salt and lemon juice.

  3. Mix really well and let sit for 5 minutes.  
  4. While kale is sitting, whisk oil, mustard, and honey.  
  5. In salad bowl, mix together kale, grapes, and pine nuts.
  6. Drizzle with dressing and serve immediately.
