There's nothing quite like a nice, simple salad to make you feel like you are truly "clean eating". My kids love the addition of different fruits to a simple salad, and it's a great way to use some leftovers for a super-quick lunch. Plus, it's also vegan!

Ingredients 

  • 1 apple, (medium, diced)
  • 1 grapefruit, (cut in segments)
  • 1 medium pomegranate, (seeded)
  • 2 cups romaine lettuce, (chopped)
  • 1 tablespoon balsamic vinegar
  • 1 teaspoon salt
  • Freshly ground pepper
  • 1 tablespoon lemon juice

Instructions 

  • Place diced apple, grapefruit segments, and pomegranate seeds in a salad bowl.
  • Add romaine lettuce and mix well.
  • Add balsamic vinegar, salt, pepper, and lemon juice.
  • Mix well and serve immediately.
