Za'atar Roasted Chickpeas

This quick snack is super-easy to make and goes well with just about any cocktail. I like to use them for a soup topping because they’re a low-carb replacement for bread or croutons.

  • 1 can chickpeas (drained, rinsed, or 1 1/2 cups cooked chickpeas)
  • 1 tablespoon olive oil
  • 1/2 teaspoon za'atar seasoning
  • 1/4 teaspoon curry powder
  • 1/4 teaspoon cumin seeds
  • Salt and pepper (to taste)


  1. Preheat oven to 400 degrees F.

  2. Line rimmed baking sheet with parchment paper.

  3. Pat chickpeas dry.

  4. Mix chickpeas, oil, za'atar seasoning, curry powder, cumin, salt, and pepper in a small bowl.

  5. Spread chickpeas on a prepared baking sheet evenly so as not to touch.

  6. Roast for 30 minutes.

  7. Turn the heat off and keep the chickpeas in the oven until cool.

  8. Store chickpeas in an airtight container or jar for up to 1 week.
