Watermelon & Olive Salad

Is this refreshing dish a salad, a snack, or a dessert? Well, that’s up to you! All I can tell you is that it's super-easy to make, delicious to eat, and completely guilt-free.

Ingredients 

  • 1/3 cup extra virgin olive oil
  • 3 tablespoons fresh lemon juice
  • 2 tablespoons kosher salt
  • 1 teaspoon tabasco
  • 1/2 teaspoon freshly ground pepper
  • 1 seedless watermelon, (8-10 pounds)
  • 1 1/4 cups kalamata olives, (pitted, coarsely chopped)
  • 1 cup mint leaves, (coarsely chopped)

Instructions 

  • Using a melon baller, scoop watermelon into little balls.
  • In a large bowl, whisk oil, lemon juice, salt, tabasco, and pepper.
  • Add watermelon and olives and toss gently.
  • Garnish with chopped mint leaves and serve immediately.
