Watermelon Cucumber Salad
This summer salad just screams “Happy August!” I came up with this salad recipe because I had some cut-up cucumbers, peppers, and watermelon – a staple in our house in August -- in the fridge, plus some leftover cucumber juice, so I mixed all of it and added some shallots and herbs. Of course, I also had to add some jalapeño for heat, and viola! A great summer salad.
Ingredients
- 2 cups fresh watermelon juice
- 1/2 cup fresh cucumber juice
- 1/2 cup cucumber, (peeled, seeded, diced)
- 1/4 cup red bell pepper, (small, diced)
- 1 cup watermelon, (cut into small cubes)
- 2 tablespoons shallot, (minced)
- 1/2 teaspoon jalapeno, (seeded, minced)
- 3 tablespoons fresh mint, (thinly sliced)
- 1 tablespoon red wine vinegar
- 2 tablespoons lime juice
- 1/2 teaspoon flaky sea salt
Instructions
- In a juicer, separately juice watermelon and cucumber.
- In a mixing bowl, add juices, cucumber, bell pepper, watermelon, shallot, jalapeño, mint, and vinegar, stirring gently to mix all ingredients.
- Add a squeeze of lime and sprinkle of sea salt before serving.
