Fried spring rolls and restaurant versions can include egg in the wrapper, meat or shrimp in the filling, or fish sauce in the dip, so it’s worth asking. Dip one sheet of rice paper in warm water for a few seconds until it just starts to soften, then lay it flat on a damp board.
